A Week of Freeman Suppers

Our (E) meals this week -

This was Italian roast beef (made in the crock pot), green beans + almonds, and scalloped potatoes.  The roast was SO GOOD.  Everything was good!  And so easy to make!

Meal of the week (maybe the meal of my life) – beef stroganoff in an Italian bread bowl + roasted kale.  This is a meal that actually tastes like something you might get in a restaurant.

Chicken fajita nachos (with Smart Ones Santa Fe rice & beans) – wonderful!

Breakfast Casserole (not an E-Meals recipe) – we LOVE this.  One of Brent’s coworkers gave him the recipe.  We like to make it on the weekend or early in the week and have it for breakfast all week long.  We actually made this on Friday night and I ate it for breakfast AND lunch on Saturday (at work).

Ingredients:

  • (2) 12-ounce packages of sausage (we use mild, reduced fat Jimmy Dean sausage – it is also good if you get 1 spicy package & 1 mild package)
  • 4 cups of shredded cheddar cheese (I prefer sharp.)
  • 1 package fresh hashbrown potatoes
  • 12 eggs
  • 3 cups milk
  • salt & pepper to taste

Directions:

  1. Brown & drain sausage (or forget to drain it, if you are  me).
  2. Mix hash browns with 2 cups of cheese, then line the bottom of a casserole dish (9x13) with this mixture.  I add the salt & pepper to this layer.
  3. Layer the sausage on top of the hash brown/cheese layer.
  4. Whisk 12 eggs + 3 cups of milk together, and pour over the sausage layer, covering thoroughly.
  5. Cover with 2 cups of shredded cheese.

Bake at 350 for about an hour (or until done).

Honey chicken made in the crockpot & served over rice.  This was excellent!  The picture makes it look bad, but we actually doubled the recipe and got 5 meals out of this!

And chicken/sausage gumbo.  It was just okay – I’m not too crazy about soup & I wanted it to be spicier than it was.  But this recipe made a TON of soup!

Of course!  Dessert!  They’re everywhere now that Valentine’s Day is over!

The other day I went to Walgreens and bought 3 packages of 4 Cadbury eggs.  The cashier said “Didn’t you see the individual ones?”  I mumbled something about buying in bulk to freeze them and hurried out of the store with my head down. 

We’re so excited about E-meals again! This is what we like about it:

  1. Takes advantage of store sales.
  2. Saves money!  Brent got groceries today & it was only $70!
  3. The recipes are easy but good.
  4. Don’t have to think about what we’re going to have for supper.
  5. Lots of crockpot recipes.
  6. We eat out less and we’re not even tempted to eat out as much because the recipes are so good!
  7. Leftovers for lunch!
  8. Sense of pride due to fixing such good meals!

Hopefully all the weeks are as good as this one!

Funny story – every other week, we have a lady that comes and cleans for a few hours on Friday morning.  We started doing this after we first got the house and I was working a lot more than I am now, including every other weekend. Even though I no longer have that schedule, we have just continued it because we really like the woman and it is just really nice to come home on some Friday afternoons to a clean house!

So, we have all of these rubber snakes that we got at Academy Sports on sale and try to hide them around the house and scare each other (and especially Kourtney). Well, when I had back surgery, I was there one morning when the lady came to clean and she asked me if we had been trying to scare her because she’ll occasionally find a snake here & there (we totally have NOT been trying to scare her), they’re just laying around.  But this past week, I put one in the pantry beside the trash can, knowing that she would see it when she took the trash out…..when I got home and opened the refrigerator, it was waiting for me!  Good one!

“A burrito a day keeps the honeybadger away!”  Second favorite quote of the week!  My favorite quote of the week is “If you don’t have the beat you don’t have nothing.”  ha!  Said by a patient at work and faithfully documented in the computer by her nurse!

Huge news!!!  Los Calientes, our FAVORITE Mexican restaurant that we thought had gone out of business, has moved to another location in Northport under a different name – Fernando’s. Yay!  The management is the same, waitstaff is the same, food is the same!!!  Hooray!

This is the winter of curly hair.  I haven’t straightened it in weeks now.  So much easier. And I think I’m looking just like my mother.  Sometimes I look in the mirror or look at a picture and it (I) am familiar to me – but not because I am looking at myself, but because I think I look like Mama. It is actually very strange – it is almost like I think “Oh, that girl looks like Mama.” And it is ME!  I really think I look just like her in this top picture! Please excuse the goofy expression.   I love the fact that the iPhone is my new mirror.

Funny story: yesterday I stopped by CVS after work to get Brent’s V-Day card.  AND CVS is the only place in town that we know of that has Cadbury eggs (our favorite).  Guess who I ran into in the card aisle?  Brent!!  Of course!  Nothing like the last minute!  I think it is funny enough that we ran into eachother, but even funnier knowing WHY we ran into each other at the ONLY place in town that sells Cadbury crème eggs.  Gosh, I love those things!!!!!!

Valentine’s Day supper from Tazikis!  Grilled chicken basal pesto gyro + Greek potatoes + chips (weird, huh)?  We ate this while watching Breaking Dawn (and promising not to tell anyone), then New Girl and Raising Hope.
