Grocery Shopping 11/2

We have now been doing Emeals off and on for over 3 years. We have changed plans several times and now we are using the new Paleo plan: 7 days of meals for 2 people with no specific grocery store. This particular plan is based on the Paleo diet and is focused on veggies, eggs, healthy fats & meat with optional cheese. No grains, rice or pasta. 

I have always thought that eating healthier was more expensive than eating the standard American diet. But today I did so good and was able to get so much food at such a low price!  Since we are on a budget, I wanted to post my shopping trip from today for motivation/inspiration. This is with little to no effort (such as shopping for the best deal, using coupons, buying bulk, etc).

This entire haul was only $76.82 and included my lunch (from today), dog food, laundry detergent and discount Halloween candy.  When you subtract the cost of my lunch, the detergent, dog food, candy and generic coke, the cost of our food groceries was only $53.84 – not bad when you consider that we cook all meals at home except for the random pizza delivery or Mexican meal out.  When you subtract the bacon (not used for the suppers), that is $48.85 for the ingredients for 7 meals for two people, or $6.98 per meal. Each meal is 2-4 servings, so this is 1.75-3.49 per meal, per person.  I’m not sure if that is good or not, but it seems cheap to me, especially when compared to eating out!  Of course, several of the items are condiments or more than what is actually needed for the recipes…for example, I bought an entire bag of onions instead of just 2 onions.  But I assume it evens out over time when I use items that I already have from previous shopping trips.

Stores: Wal Mart (I HATE this place, but really the prices are great.) & Belle Foods (formerly Bruno’s). The trick is only getting what is on your list!!!  That was hard!  I had to put several items back after reconsidering.

I and Love and You

Tonight we saw The Avett Brothers at the Boutwell Auditorium in downtown Birmingham!  They were so good!!!  It was like a mix between a rock concert, a country concert, a pop concert and a bluegrass concert all in one.  We loved them!   All of the instruments were amazing.

Highlight #1 of the evening:

Tortugas Pizza in Hoover

If you research on the internet for “best pizza in Birmingham,” Tortugas keeps coming up high on every list. We ate here once before when we were living in Birmingham and loved it – the only downside is that the Chicago deep dish (the one that we like) takes so long to bake.  So we called as soon as we left Tuscaloosa and asked them to get it ready for us.

It was very good! The Chicago style pizza has a really thick, crunchy crust and cheese underneath the tomatoes (fork + knife mandatory!).  And the tomatoes are so tangy and awesome and perfect.  It is hard to eat more than one slice because it is just so thick.

Two very disappointing triple-shot skinny lattes were consumed on the way to the concert.  You know, for the caffeine. We are not as young as we once were and the concert didn’t start until 8 pm. Haha!

The picture on the left is of a statue of a steel worker in downtown, right outside the Birmingham Museum of Art.  I’ve been meaning to go to the museum for the past several years but have never made it down there. (10!!!  For the past 10 years!  I have lived in Alabama for 10 years now! Oh my goodness!)

We actually heard a rumor that they would not be selling alcohol at the concert and we were pretty excited about that.  Drunk rednecks tend to be the most obnoxious people in the world.  Plus, it never fails that we are *always* sitting at the end of the aisle and have to get up & down all night long to let said rednecks in and out while making their beer runs & taking bathroom breaks.  We were actually little bit disappointed to find out that they were serving alcohol (St. Patrick’s Day, after all) AND we were were on an aisle seat, of course. (And had to get up and down several times and one guy stepped on my foot, right on my blistered toe!)

But it wasn’t too bad.  We were actually on the front row of seats because the floor level was standing only.  We got there, sat down, and simultaneously expressed our disbelief about why people would want to stand up the whole time.  Clearly we’re total party animals.  In fact, Brent actually said “I wish these arm rests would raise up so I could lay down.”  AT A CONCERT.

But the actual concert was so good. I really had no idea how “rock” they would be.  I imagined that it would be more mellow. They came out singing “Head Full of Doubt” which is one of my favorite songs ever and the first song I ever heard of theirs. Of course I have made Brent listen to it several times in the car. So after that song was over, we were one song in and Brent had already heard all of the songs he knew of theirs! He said “Okay, let’s go!” Ha ha! He definitely changed his mind though, and he better not think I didn’t see him dancing just a little bit in his seat. “I and Love and You” was second best.  They were all good – even the songs I didn’t know.  I have been to concerts before where the artists played new music or songs I didn’t know and I just always kind of waited them out. But not tonight!  Every song was really, really good.  Their voices and the instruments are just incredible – and I know I always say that when I go to a concert, but you really can’t tell (or trust) what some one sounds like on a CD or the radio.  The real deal is (usually) so much better (except the Civil Wars, who sound equally as perfect on CD and in person) – I’m not sure why I am always so pleasantly surprised at the artist’s voices.  One of my favorites tonight was “Just a Closer Walk with Thee.”  I just love old Southern gospel.

But to get back to the drunk people, oh they were funny.  There are few things in life funnier than watching drunk rednecks dance, especially the older women (not senior citizens, but those who are in their late 40’s – early 60’s - the oldest women who typically attend concerts) who are always wearing a skirt that is a bit too short and some sort of animal print) or the middle aged men, who typically wear a thick gold chain and have on way too much cologne. By the way: Dear stocky white redneck guy in his mid-to-late thirties wearing denim shorts and dancing/convulsing like a banshee tonight: Did the fact that you were flipping the bird with both hands at the stage while you were dancing mean that you really like the show or really hated it?!  Very confusing for those of us who were watching you the entire time.

So, all in all it was a GREAT concert!  I would definitely see them again!  I know Brent is just so happy that I have broadened his musical horizons.  Smile We have been to 6 shows in the past 10 months:

Thoughts on Changing Seasons

Summer is winding down in Alabama. I love fall, but I’m always still kind of sad at this time of the year, saying good-bye to summer. This is what the beginning of fall is looking like at the Freeman residence.

The return of oatmeal!

This is my favorite breakfast for the cooler weather.  The easiest way to make it is is with instant oats (we like maple/brown sugar or cinnamon/brown sugar) in the microwave using milk (not water – we actually use Silk vanilla almond milk) per package directions. I usually use a little bit less milk than recommended because I like the oatmeal to be thicker.  Or you can make it the long way on the stove with regular oats + milk and add in some brown sugar & cinnamon, to taste.  Sometimes we add chia seeds (a large pinch – probably about a tbsp) because they are nutritious and also because they thicken up the oatmeal even more.  This is not necessary, though.

Next, while the oatmeal is still really hot (still on stove or immediately out of the microwave), add 1/2 – 1 sliced banana and stir, stir, stir.  The banana will mostly dissolve into the oatmeal, but there will still be big clumps throughout.  The banana gives it a thick, creamy texture + additional sweetness.  If you use a whole, ripe banana you may not need to add additional sugar.

Next – garnish!  We use our homemade granola (probably about 2-3 tablespoons + 1 tbsp of nut butter.  We really like Barney Butter or Skippy natural peanut butter (my favorite).  I bet Biscoff spread would be really good, too.  This oatmeal is so delicious, wonderful, and filling.  The flavor combination possibilities are unlimited!

Next: Chocolate Pie!

So, it was good news to hear that I have been cleared by the surgeon to “participate in food preparation.”  Except I made this pie before I actually got that clearance.  Ooops.  But it was worth it!  And it was so easy. I used a recipe from Chocolate Covered Katie (best dessert recipe site on the internet, and they are all made with nutritious, whole foods).  I melted the (milk) chocolate chips in the microwave (30 second intervals & stir)…it only takes about a minute and a half. I used a pre-made shortbread-type pie crust that Brent picked up.  Unfortunately (or maybe fortunately for me), Brent picked up the ingredients for this pie, so he refused to eat it.  Because it contained an entire container of tofu.

Yes!  A chocolate tofu pie! I totally agree that tofu is kind-of creepy/nasty, but you honestly cannot taste it in this recipe. It gives it such a great creamy, but firm, texture.  And the longer this pie sits in the refrigerator, the better it gets.  But Brent wouldn’t know.

This is the first leaf change I have seen.  This tree, which is actually on our neighbor’s property, has the prettiest leaves in the fall…I have posted pictures of them several times on this blog and I’m sure I will post many more this fall (you are welcome, Kourtney!).

Evening walks…..

We still haven’t found the family of this stray dog.  She is so sweet and well-behaved and she is so happy with us. And she is so, so cute! When we get the leash out, she goes absolutely crazy, jumping all over the place.  She loves to go outside!  When I get back to walking, she will be an excellent exercise companion.  She has so much energy!

This flower is blooming in our backyard.  I certainly didn’t plant it, but I don’t think I have ever noticed it before.  I don’t know what it is!

The tomatoes (above) are actually our neighbor’s that are overflowing across the fence into our yard.  I have *always* hated tomatoes, but have always loved ketchup, marinara sauce, pizza sauce, etc.  Lately, though, I think my tastes are changing.  I love margherita pizzas and Subway’s veggie subs (with tomatoes).  And besides all of that, I *love* the smell of tomatoes on the vine…I can close my eyes and I am at home in my parent’s garden.  It’s so funny how food can have such strong emotional associations.  One spring I will get my act together and plant a garden that includes tomatoes.

Sometimes, when I’m taking all of these random ordinary photos, I am struck with an odd, sentimental feeling, almost like I am in the future looking back on our life. I realize that one day, I am going to look back on this house and our simple little life here in Alabama and miss it.  It is easy to get bored and wish for a more exciting time in the future (holidays, vacations, children, etc), but I believe that it is so important to be grateful for the present, no matter how monotonous and ordinary it may seem.  I truly wish I had started blogging and taking photos of our everyday life so much earlier.  I hope that our family and friends who read this blog enjoy the photos and stories, but really, this space is for us…almost like a scrapbook/journal, but lower-maintenance and more fun.

This is me, recovering from back surgery, with my favorite toy.  I accidentally cropped my dark roots out of this photo, which turned out good for me. Unfortunately, I could not crop out the food-stained shirt.  I have major problems keeping things in my hands.  This has saved my life:

I honestly don’t know what I would have done during this recovery period without my “grabber.”  It is wonderful.  I never realized how much stuff I drop until I could no longer pick it all up! The only problem is that I drop the grabber all the time also!

Okay, one more thing (this post is out of control, clearly):

That would be Red Lobster’s cheddar garlic biscuits.  My first meal out of the house in weeks – this happened on Wednesday, after my first follow-up appointment.  I never order lobster because it is so $$$$, but this time, since it was kind-of like a special occasion, we went all out and it was wonderful – lobster, scallops & shrimp.  We had coupons & ended up getting $7 off of our total bill (Brent is becoming the Coupon King…more info to come).

So far this day has been full of my favorite things…a walk, Farmer’s Market, taking photos, the thrift store (yay!), and lunch at Ichiban, the Japanese restaurant.
