Perfect Summer Breakfast

This past weekend I made a half batch of our favorite granola.

This granola is really good sprinkled on top of a bowl of oatmeal.  But here is a summer variation when a hot, thick bowl of oats is not as appealing.

Best Summer Breakfast:

1 serving of low fat vanilla yogurt (I use Chobani Greek yogurt) – dump in bowl

1 pear, sliced into small pieces, dumped on top

1/3 cup granola, sprinkled on top

This makes a huge filling healthy breakfast that tastes like dessert!

Waffles with PB Sauce + Fruit

I have been craving waffles for weeks now, so I finally bought some (the frozen kind) during the grocery shop with week.  I haven’t made anything interesting or creative lately, so I decided to try to do something different with the waffles this morning. Here is what I came up with.

Waffles with PB Sauce + Fruit

To make the peanut butter “sauce,” heat ~ 1 tbsp of pb in the microwave for ~ 15 seconds, to get it soft + warm.  Add 1 tbsp water and stir to make a paste.  Microwave again for ~ 15 seconds.  Add another approximate tablespoon of water and mix to a thick sauce consistency. 

Layer toasted waffles, pb sauce, and a tiny bit of maple syrup (preferably 100% pure, obviously). You really don’t need much syrup because of the sweetness + consistency of the sauce.  Add fresh fruit on top.

This was really, really good – very decadent!  I loved the combination of pb + strawberries – in a way, it tasted like a caramel apple.  I also liked the pb + syrup flavor combo.  Will definitely be making this again.

Breaking the Fast

Best toast EVER?

(I almost said “best BREAKFAST ever” but honestly, is anything better than my oatmeal?  The oatmeal that Brent keeps begging me to make every morning?  I finally feel like a real wife!)

I was so hungry and excited just thinking about this toast that I actually popped the bread (Big Sky Bread) up from the toaster prematurely…..twice.  Just to see if it was finished yet.  Sad, I know.

When it was (finally) finished I spread ~ 1 tbsp of Skippy Natural peanut butter + ~1/2 tbsp coconut butter, then sprinkled with chia seeds.

This is the coconut butter I got yesterday at Whole Foods.  It is very calorie dense + $$$$, but a little goes a long way.  And it is absolutely delicious.  This morning I melted it too much.  It is a solid in the jar and must be melted to spread.  Instead of spreadable, I made it very liquid-y.  Still good, though.

Breakfast has become my very favorite meal of the day!
